Emma says, ‘In a private conservation area, we'll get up-close to iguanas as I explain about the plants and animals that thrive here. We'll see how organic honey is collected and try some, too. And I love visiting the organic plantation. This is where we grow all kinds of local Dominican produce. Taste exotic spices and sample sweet papaya plucked fresh from the tree.'As the day heats up, cool off with a swim stop on Punta Cana beach. Then, go karting along the dirt tracks and trails of Ojos Indigenas Ecological Park. Bask in the beauty and silence of the reserve, once home to the ancient Taino people, and take a dip in the mirror-like lagoon. And after a sizzling barbecue lunch, we round off with a relaxing catamaran cruise complete with an open bar.

This wild buggy ride through the Dominican countryside makes for a morning of adrenaline-pumping adventure. As well as rumbling through rustic villages, you'll visit an organic farm and cool off with a swim in a cenote. There's no better way to put a bit of oomph into your holidays.After pick-up, we'll head to a ranch for a safety briefing and the lowdown on Terracross buggies. Don your helmet, put on your belt and give it some welly. You'll zoom across the backwoods to the co-op farm. Your guide will tell you about and let you try traditional Dominican products such as coconut oil, chocolate tea, tobacco, rum, cocoa and, of course, the world-famous coffee.Buggy driving can be a messy business, so you'll round up with a chance to freshen up with a swim in a cenote – a natural spring of crystal clear water.

Half-day Terracross tour of the countryside from Punta Cana

There are few better ways to see the unspoilt Dominican countryside than a Terracross safari. You'll drive through winding rural dirt tracks through plantations all the way to the famous Domitai Cave Park and a replica Taino village. Luis, one of our local guides, says, ‘We are the world's largest producer of organic, fair trade cocoa. Around half of our cocoa is made into the finest chocolate you can buy. So, trying traditional cocoa products in a Dominican farm is a real treat, even if you don't have a sweet tooth.'Kick off with some mud-splattered, high-octane fun as you ride cross-country to a cenote cave for a swim in the Domitai Cave Park. These sinkholes with clear, fresh water are perfect for a cooling dip. As it's a private venue, there are fewer crowds and vendors than at other cenotes. You'll also get to savour some local specialities such as empanadas and pineapple wine. Next, drop by a recreated Taino village – they were the aborigines who lived on the island before Columbus arrived – where you'll observe a folkloric show.Plus, you'll learn all about the production of local crops which are so critical to the local economy – coconut oil, sugarcane, coffee and chocolate as well as the unique Dominican chocolate tea. During your visit you'll have the chance to try some of these local products, along with the national tipple, mamajuana. Overall, a great close-up view of the Dominican countryside and local culture – on a thrilling Terracross safari.
