Tunisia's Atlas Mountains are dotted with remote Berber villages where modern life has barely made an impact. On this private tour, you'll be whisked into the highlands in a comfy 4x4 off-roader. Stop by an olive oil factory before visiting the Roman ruins of Zaghouan and Uthina. Mohamed, one of our expert local guides, says, ‘The fresher the olive oil, the more antioxidants are active. If you taste an olive oil so fresh and peppery it tickles your throat, you know its health-giving properties are strong.'
If you're looking for fine Tunisian olive oil, you've found it. Tanit Meditteraneum only uses the best quality handpicked olives from the local area, and cold presses them within hours of harvest. You'll take part in a tasting session with typical local breads. Then, it's on to the Dar Zaghouan eco-lodge for a cookery demonstration and a traditional lunch prepared with local produce.
Next, you'll visit the ancient Zaghouan Water Temple, where a sacred spring emerges. Built by the Romans in 139 AD to venerate water's life-giving properties, the striking classical features and site at the foot of the mountain show the importance of the source in ancient times. The Roman theme continues at the little-visited site of Uthina. Marvel at the ruined baths, the amphitheatre – where up to 16,000 spectators watched gladiatorial combats – and the magnificent mosaics. You'll round off the day with a visit to Château Bacchus vineyard, where you'll sample some fine Tunisian wines.
